My take on your issue (not an expert, though):
Your car believes that you have the 3 zone ac unit installed which afaik the Octavia does not have. So it's lacking the temp. sensor, flap motor and flap position sensor.
Now as the touch panel comes from a Passat, which does have 3 zone AirCon, I am not sure if you can even code that correctly. You may have to live with those fault codes.
As for your questions: I don't fully understand what you mean. What I do know is that there are different panels available, depending on the car's extras. There may be a button for the heated windshield, for heated / ventilated seats, for the auxiliary heating etc. You have to have the one installed that matches your car because the buttons are.. "self aware". Meaning while the layout on all different panels may be the same, if you have one installed that does not have the button for your heated windshield, you will not be able to turn it on. You cannot code the panel so that the button which would be the windshield heater on the correct panel is just doing the job for you. The button knows, that it is not the button for the windshield heater.
So your question regarding the basic coding seems odd to me. As far as I know, you cannot code the button layout of the panel.
Which car (RS? What year?) do you have and where are you located at?
